Preparation
Remove the stems from the golden apples and steam them for 15 minutes. Let them cool before removing the seeds from the middle as well as the skin which is very tough.
Cook the potatoes and mash them, mixing them with the flesh of the golden apples.
Fry the shallot cut into small pieces, with the crumbled sausage meat. Add the cumin and ginger then the balsamic vinegar.
When the sausage meat is cooked, mix everything with the golden potatoes and potatoes. Add salt and pepper then place in a baking dish. Sprinkle with grated cheese. Put in the oven at 180°C (thermostat 6), for about 30 min.
