Preheat the oven to 200°C (th.6/7) using convection and grill.
Cut the fish into small dice.
Cut the passion fruit in half and scoop out the pulp with a spoon. Squeeze the pulp through a colander to collect the juice. Rinse the passion seeds to separate them. Keep the fruit husks and seeds.
Mix 1 whole egg and 1 egg yolk, the fish, the passion fruit juice, the cumin, the fresh cream and the salt.
Spread the coarse salt in an oven dish, and place the hollowed-out passion fruit halves on top, pressing them down well.
Fill them with fish stuffing. Sprinkle a few seeds on top. Place in the oven and cook for 8 minutes.
Serve very hot.
