fruit aspic

  • gelatin
    2 sheets
  • icing sugar

  • cane sugar syrup

  • lemon
    its juice
  • peach liqueur

Put two small molds in the refrigerator. Peel the mango and the kiwi. wash and hull the strawberries. Cut into four and dice the other fruits.

Drizzle them with half the lemon juice, the sugar syrup and the liqueur. Let the fruit marinate for about 10 minutes. Soften the gelatin sheets in cold water. Wash and pat dry the mint leaves.

Mix the whole strawberries, add the icing sugar and the lemon juice; filter the coulis, place it in a cool place. Drain the fruit, keep the maceration juice.

Fill the two molds with the fruit and pour the jelly on top. Put them back in the fridge and let them set for at least 3 hours.

To serve, peel off the aspics with a thin blade, unmold them on plates. Surround with a bead of coulis and decorate with tuiles and mint leaves.
