Peel the pears, keeping the stems, remove the seeds from the base and lemon them as you go. in a saucepan, boil 1 liter of water with the caster sugar. Dip the pears in it, cook them over low heat for about 15 minutes, then let them cool in their cooking juices.
Break the chocolate into small pieces. In a saucepan, melt them in the milk over low heat, stirring with a spatula, then add the butter and cream. Mix, keep warm over a bain-marie.
Drain the pears. Place a scoop of vanilla ice cream in the middle of each dessert plate and place a pear next to it. Surround with chocolate sauce and cover the whole with a pancake.
Sprinkle with sugar, then serve immediately.
