Get started
Mash the banana in a bowl. Add the egg, egg white, the cottage cheese and cinnamon. Stir well until smooth. Pour a dash of coconut oil into a frying pan and let it get very hot. Bake a large, thick pancake. Serve with a dollop of cottage cheese, some fruit or a little syrup.
Hint: The pancakes are also delicious cold. Take one with you in your lunch box.
