It is the perfect substitute for onions or shallots in dishes and soups.
It can even be pan-fried whole as a side vegetable.
How about being able to grow them endlessly at home for free?
Well, it's quite simple. Just put it in water. Watch:

1. Grab your bunch of spring onions.
2. Cut the spring onion leaving three or four centimeters above the roots.
3. Place its roots in a small glass jar.
4. Put water in the bottom of the jar.
5. Put the spring onion into the light near a window and watch it grow.
There you go, no more need to buy spring onions, they grow back on their own :-)
All you have to do is help yourself by cutting the green stems of the spring onion.
You can grow as many as you want to always have on hand.
Remember to change the water regularly, about every 2 or 3 days. The more sunlight the spring onion has, the faster it grows.
Remember to keep the elastic of the boot to be able to keep it straight in the jar.
Be aware that after pushing it back 3 to 4 times in water, the spring onion will lose some of its flavor. To avoid this, replant it in a pot of soil where it will be able to recharge its nutrients.
