The problem is that you never know what to do with the peelings...
As a result, they end up in the trash... It's a shame!
Luckily, my dietitian friend gave me 2 delicious easy-to-make recipes for using cucumber peels .

These recipes are foolproof and ready in 5 min max. Ideal for summer! Watch:
I can tell you that this cold drink is a real delight, especially when it's hot!
And it's much better than those trendy detox drinks with dubious ingredients.
Not to mention that it's much cheaper, even free!
- 1 large handful of organic cucumber peelings
- 2 organic lime zest
- 1 organic lemon zest
- 2 sprigs of mint
- 1 liter of spring water or sparkling water
- Start by washing the cucumber, mint, lime and lemon. If the vegetables are not organic, use baking soda to remove as much pesticide as possible.
- Peel the cucumber and then place the cucumber peelings in the bottom of a carafe.
- Take the zest from the lemons with a zester or peeler. The zest will then be bigger.
- Take two zests from the lime and one from the lemon and put them in the carafe.
- Take the mint leaves and add them to the carafe as well.
- All you have to do is pour the spring water or sparkling water over the mixture.
- Place your carafe in the fridge for 1 to 2 hours to have a very cold drink and to allow time for the ingredients to infuse.
There you go, your homemade refreshing detox drink is already ready :-)
This soup is the ideal appetizer when it's hot. It is as light as it is refreshing.
It is a very economical and easy to make dish. And it's ready in 5 minutes. Everyone loves it at my house!
And all that, with some cucumber peelings! It really is a very economical and anti-waste recipe.
- peelings of 5 cucumbers
- 1 sweet onion
- 1/2 bunch of coriander
- 2 Greek yogurts
- 10 cl of olive oil
- 1 teaspoon of curry
- Peel the onion and cut it finely. To avoid crying, use these effective tips.
- Wash the coriander and chop it. Put a third aside, in a container.
- Then pour the two yoghurts into a blender before adding the olive oil.
- Add the thawed peelings, 2/3 of the coriander, the onion and the curry. Don't forget to add salt and pepper to taste.
- Start mixing the mixture by choosing a low speed. Then increase the speed.
- Continue to mix for 2 min, the time necessary to have a very smooth and homogeneous consistency.
- Pour the soup into 4 bowls and garnish with a little chopped coriander on top.
- To keep your soup fresh, add 1 or 2 ice cubes per bowl.
There you go, your cucumber peel soup is already ready :-)
- To clean your blender, here is a tip to get it all clean in 2 min.
- If you can't find cilantro, you can replace it with mint or even parsley.
- As we rarely eat 5 cucumbers at once, I advise you to freeze the peelings of the cucumbers as you go. Just put them in a freezer bag.
Before you start your recipe, take them out of the freezer to thaw gently. That way, you will have enough of it.
