It's much more economical than buying it in an organic supermarket!

It takes a bit of time, but don't worry, it's super easy.

Here is the super simple recipe for homemade kombucha . Watch:

Ingredients

- 5g of black tea

- 70 g of white sugar

- 1 liter of water

- 1 mother of kombucha

- 1 jar with a wide opening

- 1 fine sieve

- 1 funnel

- 1 empty glass bottle

- 1 teapot of at least 1 liter (or another container that can hold hot liquids)

- 1 clean cloth and 1 rubber band

How to

1. Scald all cooking utensils you are going to use.

2. Heat the water.

3. Put the tea in the teapot.

4. Pour the hot water over the tea.

5. Add the sugar.

6. Let cool to room temperature.

7. Using the strainer, strain the tea into the jar.

8. Place the mother there, smooth and light side up.

9. Cover with a clean cloth and secure with a rubber band.

10. Leave to ferment for 8 to 10 days, away from light, at a minimum of 20°C.

11. Strain the liquid into the glass bottle, using the funnel.

12. Close it tightly and leave to ferment for another 4-5 days.

Kombucha is an acidic, slightly fizzy drink that is best drunk chilled.

It must therefore be put in the fridge where you can keep it for a week.

You can drink it as an aperitif or as a cure. In both cases, you will benefit from all its virtues for your health!

Additional advice

- Kombucha's mother is a mushroom (a symbiote). It is a viscous and whitish membrane a few centimeters thick. You can buy a kombucha mother on the Internet, in organic stores or find a free one on some forums. Or, you can make it yourself, by following this recipe.

- In step 10 of the recipe, take a little liquid and the mother and keep it in the fridge, in an airtight glass box. That way, you'll already have your mom to make your next kombucha.

- From day 8, you know your drink is ready when it smells like cider.

- If the smell is unpleasant or mold has formed, it is better to throw the drink away and start again.

- If you don't like black tea, replace it with green tea.

- You can also use unrefined brown sugar or whole cane sugar, rapadura, instead of white sugar.

- Feel free to flavor your drink with ginger, citrus zest, basil or mint leaves.

- The bottle in which you keep the kombucha must be resistant to pressure.

- Kombucha is slightly alcoholic (between 0.5% and 3%). It is therefore not recommended for pregnant women and children to drink it.

- Avoid using metal or ceramic containers which present a greater risk of contamination. Choose glass containers instead.

- Kombucha is high in sugar. It is better not to drink more than 2 or 3 glasses a day.

The benefits of kombucha

Kombucha is an age-old drink traditionally consumed in Eastern Europe and Asia.

It is a fermented drink, called "living":it is sweetened tea that macerates with a mushroom.

The sugar is then transformed into micro-organisms and thanks to fermentation, it is enriched with molecules:lactic acids, vitamin B and enzymes.

This probiotic drink would be beneficial for digestion and would strengthen the immune defenses.

It would also be detoxifying, energizing and antioxidant.
