- Research by the University of Florida shows that eating a portion of Japanese shiitakes every day for at least four weeks strengthens their immune system. The secret is said to be in the beta-glucans, which are also found in traditional Dutch white mushrooms.
- Don't want to eat meat? Meat and fish cannot be completely replaced by mushrooms, the protein content is too low for that. So supplement with other protein sources such as legumes, nuts or eggs.
