Do you turn on the barbecue during the sunny days? You can prepare this dessert on the barbecue, but you can also use a grill pan.
Ingredients
- 1 pineapple
- 1 tbsp rose peppercorns
- 6 tbsp Chutney Mango &Spices
- 1 cinnamon stick
- 4 tbsp passion fruit vinegar
- 4 scoops of (coconut) ice cream
- 1 can (33 cl) ginger beer
Preparation
- Heat your barbecue or grill pan to about 180 °C.
- Cut the pineapple into slices about 1 cm thick. Grill the discs until there are nice lines on them and turn them in such a way that a checkered pattern is created.
- Bring the ginger beer to the boil in a saucepan with the cinnamon stick, pink peppercorns and passion fruit vinegar. Let the mixture reduce until you have about 1/3 left.
- Serve each slice of pineapple with a heaping tablespoon of mango chutney, pour some of your homemade ginger syrup over it and to complete the party:scoop a large scoop of coconut ice cream next to it.
Serving tip: this dessert goes well with a can of ginger beer.
