Herbnoten are the hard, round 'biscuits' with a flat bottom.
Pepernoten
Pepernoten are gingerbread chunks with an irregular dice shape. They are a bit tougher. Pepernoten were early made with, among other things, pepper, but nowadays speculaas spices are used and there is not always pepper in it.
Bakers maintain the distinction, as do some people. However, both kruidnoten and pepernoten are often referred to as pepernoten. Onze Taal writes that, according to Van Dale, both the balls and the chunks can be referred to by both names.
