Pepernoten recipe for small and larger bakers

Zwarte Piet may be the subject of a heated discussion, but one part of the Sinterklaas celebration is still standing proudly. The gingerbread cookies! Although it is also standard grumbled by whiners 'that they are in the store very early this year'. Don't worry people, don't they taste like gingerbread in October? A delicious gingerbread recipe should of course not be missed during this period. Now that Sinterklaas is almost in the country we can let ourselves go again, I think that is a wonderful period. Especially now that Senn is aware of the whole thing. He has been asking for half a year when Santa is coming again. Even Mette (1 year) was explained in scents and colors that Sinterklaas is coming from Spain with his steamboat. I think that's cute.

The coming weeks will therefore be all about Sinterklaas at my house. The house is decorated with black Piets and Senn has been checking his shoe for days in his Pieten suit. Then you know it's high time for gingerbread cookies! And let's face it:making your own is much more fun and not difficult at all, especially not with this gingerbread recipe. I like to bake the pepernoten weeks in advance, I bake a Sinterklaas cake in the week of Sinterklaas.

Pepernoten recipe (also for small bakeries)

Ingredients gingerbread recipe

  • 250  gr self-raising flour
  • 100 gr butter or margarine
  • 50 ml milk
  • 125 gr brown sugar
  • 1.5 tablespoons of gingerbread spices
  • pinch of salt

Preparation method for gingerbread cookies

  • Preheat the oven to 170°C
  • Mix the butter in a mixing bowl until soft
  • Knead with your hands or with the mixer (Note using dough hooks) knead the flour, sugar, speculaas spices, salt and milk into the butter until everything is well mixed. Then you can knead the dough into a cohesive whole with your hands.
  • Make small balls of the dough and place them on a baking tray lined with baking paper. Press the balls a little so that they get the shape of gingerbread cookies. If the kids help out, they might find round gingerbread cookies a bit boring. Let them experiment with funny shapes!
  • Bake the gingerbread cookies for about 15 minutes in the preheated oven.
