To close this beautiful year with delight, I reveal the ultimate gluten-free and lactose-free gourmet recipe in collaboration with Schär .
What could be better in this festive period to taste good cakes? So a few days before New Year's Eve, I offer you a recipe for Christmas Cookies shortbread type.
Everything is there to get you in the mood. The spices subtly awaken the senses. All you have to do is serve yourself a mulled wine, a tasty tea or even a hot chocolate.
To work the dough, I used the essential flour Mix Pâtisserie – Mix C de Schär mixed with organic buckwheat brown rice flour.
To decorate my table , I collaborated with Nature et Découvertes (Light Garland).

– 100 gr of Mix Pastry flour « Schär ”
– 50 g rice flour
– 50 g buckwheat flour
– 125 g vegetable margarine
– 1 tsp cinnamon
– 1 egg
– 100 g coconut blossom sugar
– 50 g ground almonds
– 150 g icing sugar
– 1 tsp lemon juice
– 1 pinch salt
– Liquid vanilla extract
– 1 egg white
– 250 g icing sugar
– Lactose-free liquid chocolate
– Lemon juice
1 / Preheat your oven to 200°C.
To start, mix the flours, the coconut blossom sugar and the almond powder in a bowl.
Then add the vegetable margarine, the egg, cinnamon and lemon juice. Work it all up with a tablespoon or a fork.
2 / Then knead the dough into one or two balls – this will be your shortbread dough.
3 / Spread it on an oiled or buttered baking sheet with vegetable margarine and flour (This will prevent the dough from sticking).
You can also use parchment paper.
4 / With cookie cutters, form your cookies (Do not hesitate to make the maximum number of cookies by optimizing your shortcrust pastry).
5 / Once your cookies are set, brush them with egg yolk so that they are golden brown and bake for about ten minutes.
6/ Finally, once cooked, sprinkle with icing sugar mixed with lemon juice, then add chocolate as you wish… Bon appétit!
