Recipe:Gingerbread cookies

Gingerbread cookies

Bake time:10-12 minutes
Yield:24 cookies

120 grams unsalted butter, soft
100 grams sugar
1 large egg
60 ml molasses
225 grams flour
1/2 teaspoon baking powder
1/8 teaspoon salt
1 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon ground cloves

In a large bowl, mix butter and sugar on medium speed for about 2 minutes until light and fluffy. Add egg and molasses; mix until well incorporated.

In a separate bowl, whisk together flour, baking powder, salt, ginger, cinnamon, nutmeg and cloves. Use the mixer on low speed to add the butter mixture until the dough is formed.

Divide the dough in half, wrap in plastic wrap and refrigerate for at least 1 hour.

Preheat the oven to 175 degrees and line baking trays with baking paper.

Set flour on a clean work surface. Roll out the dough about 3 mm thick. Cut out shapes with the desired cookie cutter.

Transfer cookies to parchment-lined baking sheets and bake for 10-12 minutes, or until set. Let cookies cool for 2-3 minutes on baking sheets and transfer to the cooling rack. Cool down completely.

Decorate cookies with royal icing.
