Tip recipe almond sheet cake

One more little tip before you get started. Do you live near the German border or do you happen to go on holiday to Germany:then step into the Aldi or Lidl. In general, all baking supplies in Germany are many times cheaper. This certainly applies to nuts, almonds, etc. You can also find the nuts in the most diverse varieties:from whole nuts with or without shells to finely ground as flour (for example almond flour).

In the list of ingredients is also Schmand. This is a milk product with a high fat content and can be compared to sour cream (if you can't find Schmand). I was lucky and bought Schmand from the Naarman brand. But as I said:sour cream is a perfect substitute and provides the same taste.

Unlike most sheet cake recipes, this one is made without yeast, making the texture fluffier and more like a real cake. This makes the almond sheet cake even more delicious.

  • 3 Eggs
  • 200 gr Schmand
  • 400 gr Sugar
  • 600 gr Flour
  • 1 packet Baking powder
  • 165 gr Butter
  • 4 tablespoons Milk
  • 200 gr Sugar
  • 200 gr Almonds slivered
Preparation
  1. Place the eggs, sugar, flour, Schmand (sour cream) and baking powder in the bowl and mix with a hand mixer. The dough is not very runny so keep an eye on this.

  2. Take the baking tray and place a sheet of baking paper on it

  3. Spread the batter over the baking tray lined with baking paper. I used my hands for this, because the dough is fairly firm and then smoothed everything out using a regular knife

  4. Preheat the oven and place the plate in the center of the oven. Bake the cake in the middle of the oven at 175˚C for about 10 minutes

While the cake is baking a bit, make the butter almond mixture:
  1. Place the pan on the stove and let the butter, sugar (200 gr) and milk melt. Do this on a low heat and stir your body

  2. Finally, add the slivered almonds to this mixture. Stir well and especially carefully

  3. Remove the cake from the oven and divide the butter almond mixture over the cake

  4. The cake is then placed back in the oven and baked for about 10 more minutes

You can also cut the sheet cake into pieces and freeze it. Remove from freezer as needed. Do not eat immediately when the cake comes out of the oven, because you can burn yourself badly.
