On Wednesday, February 3, the Americans celebrate Carrot Cake Day. The carrot cake is perfect to cut into pieces for a cup of coffee or to take with you on a winter trip, because it also provides new much-needed energy. There is a lot of variety in terms of taste and shape. However, the main ones are firm, juicy and finely grated carrots. Here we share a tasty carrot cake recipe:You can reduce the sugar slightly if you want the cake a little less sweet.
60 grams of walnuts
3 carrots
120 grams of butter &rapeseed oil
100 grams of caster sugar
210 grams of wheat flour
1 teaspoon baking powder
1 teaspoon bicarbonate
1/2 teaspoon salt
1 teaspoon ground cinnamon
1. Set the oven to 175°. Place baking paper in a square shape, approx. 20×20 cm.
2. Roughly chop the walnuts. Peel and finely grate the carrots. Beat butter, canola oil and sugar together.
3. Stir in the eggs one at a time. Turn the chopped nuts and grated carrots over.
4. Mix flour, baking powder, bicarbonate, salt and cinnamon. Stir the ingredients into the batter.
5. Pour the batter into the mold and bake the cake in the middle of the oven for about 50 minutes. Let the cake cool.
6. Beat the cream cheese, icing sugar and squeezed lemon together. Divide the topping over the cake and sprinkle the walnuts on top.
