The name fajita comes from the Spanish word faja, which means band, belt or strip and refers to the shape of the 'skirt' steak, which is long and thin beef meat. This is the meat traditionally eaten on fajitas. With the fajita, first fold the bottom of the tortilla before rolling it up. Quesadilla literally means "little cheese cake" in Spanish. It consists of two tortillas with a layer of cheese in between and possibly other ingredients, such as meat and vegetables.
