A breakfast doesn't have to be grand and compelling to impress. There is a good chance that you already have the ingredients for these simple and very tasty breakfasts in the fridge.
Avocado with egg from the oven You will need:a large avocado, an egg and a topping of your choice (eg salmon or spring onion). Cut the avocado in half, remove the pit and hollow out both halves slightly. Break an egg into the avocado half and sprinkle with your topping. Bake the halves in an oven at 220 degrees for 15 minutes. The egg must be set. This is a low-carb breakfast that is rich in proteins.
Muffins with egg and bacon
Grease a muffin tin with butter or oil. Place the bacon slices in the muffin tin. Beat the eggs in a bowl, add spices to taste. You can add some grated cheese if you want. Fill the muffin tins with the mixture. Sprinkle some more grated cheese on top. Bake them in the oven at 180 degrees for about 20 minutes.
You can replace the bacon with chicken breast or omit it altogether for a vegetarian option.
Breakfast cookies with banana and oatmeal
Take 170 grams of oatmeal, three overripe bananas and 100 grams of peanut butter. Chocolate chips are optional, but highly recommended. Preheat the oven to 175 degrees, mix all ingredients and fold in the chocolate chips. Wet your hands and make 8 balls of the dough. Press them on the baking paper in the shape of cookies. Bake for 10 to 12 minutes and allow to cool for 10 minutes.
