Cut the avocados in half. Remove the pits and scoop out the flesh with a small spoon, without piercing the skin. Put the pulp in a bowl and reserve the peel halves.
Sprinkle the flesh of the avocados with the lemon juice, mash it with a fork. Season with salt and pepper.
Add the peeled and finely chopped shallots, the coriander, the chopped chervil (keep some sprigs for decoration) and the olive oil. Pour a few drops of tabasco and mix. Adjust the seasoning and refrigerate for 10 minutes, covered with plastic wrap.
Fill the avocado halves with the spicy preparation. Spread the shelled prawns on top and garnish with a few chervil fluff. Make a bed of salad leaves if necessary and place two avocado halves on each serving plate.
