- 3 COD SQUARES
- 0.5 kg OF FRESH BEANS
- 1.5 CANDIED LEMONS
- 0.5 BOUQUET OF CHERVIL
- 3 TABLESPOONS OLIVE OIL
- MILL SALT AND PEPPER
PREPARATION
- Wash and dry the chervil. Shell the broad beans and cook them for 15 minutes in lightly salted water. Cool them, drain them, and steal them. Cut the candied lemons into quarters.
- Pour the beans and lemon wedges into a pan. Add salt and pepper. Drizzle with 2 tablespoons olive oil and warm over very low heat.
- Heat 4 tablespoons of olive oil in a sauté pan. Lay the cod fillets skin side down and cook for 10 minutes over medium heat, turning halfway through cooking. Salt and pepper.
