Either we stick to the tradition by opting for an ice cream log (180 to 200 calories per slice, compared to 400 for the pastry log) or better yet a sorbet (100 to 150 calories per slice). Either we innovate with, for example, a pyramid of scoops of ice cream to share or individual timpani (both at Picard).
" Dressed " fruit.
Not the basket, of course, but roasted, in carpaccio or fried (figs, pineapple…) with spices (cinnamon, ginger, vanilla), and a hint of brown sugar, served with a slice of lightly toasted gingerbread cut using a cookie cutter with Christmas shapes (fir tree or star).
Verrines.
We dare lots of recipes by mixing textures and flavors, and we favor small portions so that everyone can taste everything:fruit soups, cottage cheese/fruit mixture, melted chocolate/fruit (banana, pear, etc.), mousses, flans, bavarois, panna cotta, smoothies…
A soufflé with Grand Marnier.
If you are not a fan of Grand Marnier, opt for another alcohol, with citrus zest. Whisked egg whites give lightness and volume to the plate without blowing up the energy meter (especially if you use skimmed milk and reduce the quantity of butter indicated):100 to 200 calories the serving, according to the recipe.
A sabayon.
Heat a mixture of egg yolks + water + sugar + alcohol (rum, cognac, champagne, etc.) in a bain-marie, whisking constantly, pour everything over pieces of fruit placed at the bottom of cups and decorate with spices, chocolate shavings, red fruits:200 kcal per portion, on average.
