3 vegetarian fast food recipes

The eggplant burger

Ingredients for four burgers

-4 burger buns

-two eggplants

-two small salads

-two tomatoes

-an onion

-basil

-a teaspoon of olive oil

Wash the aubergines and cut them into 1 to 2 cm slices, be careful not to cut too thin slices otherwise you won't taste them. Sprinkle them with salt so that they lose their water. Fry the aubergines for 10 minutes in a pan with the teaspoon of olive oil.

Meanwhile, wash and chop the tomatoes, onion, lettuce, and basil.

Cut the burger bun and warm it up in the toaster.

Layer the toast, a slice of eggplant then the onion, lettuce, basil and tomato.

Tofu nuggets

Ingredients for two people

-500 kg of tofu

-3 eggs

-two pinches of pepper

-a small teaspoon of curry

– a bowl of flour

-2 tablespoons of milk

-a bowl of breadcrumbs (or crushed hard bread crouton)

-a drizzle of olive oil

Mix the tofu, an egg, the pepper, the curry until the mixture becomes homogeneous.

Put the flour on one plate, the breadcrumbs on another and beat the remaining eggs with the milk, you can put two tablespoons or less.

Heat a drizzle of olive oil in a skillet over low heat.

Form balls with the tofu between your hands. And dip them in the egg then the flour and breadcrumbs.

Put the tofu in the hot pan and let the nuggets brown, turning them every twenty, thirty seconds for 4 to 5 minutes.

You can make this recipe with meat or vegetables, it's just as good!

The vegetarian pizza

Ingredients for a pizza

-1 pizza dough roll

-500g of tomato sauce

-1 bag of arugula

-2 mozzarella

-1 drizzle of olive oil

Preheat the oven to 220°C, th 7.

Take out the pizza dough roll, being careful not to tear it.

Put the tomato sauce in a bowl and take the sauce little by little with a spoon, it must be spread layer by layer, making circles.

Cut the two mozzarellas into medium-sized slices (2 or 3 cm).

Wash the salad, and spread some of it over the sauce. Then add the mozzarella.

You can add all the ingredients you want (mushrooms, olives…).

Sprinkle the pizza with the rest of the salad.

Put the pizza in the oven and let it cook for 15 minutes.

Add a drizzle of olive oil before serving.
