Winter wonderland in the Netherlands:would you rather not be part of a team enthusiast or team? If you're one of the latter, you may need some inspiration as your fridge and pantry keep getting emptier. Also a direct reason to refresh that good intention to waste less food (which 56% of the Dutch have on their intention list). In fact, research shows that 40 percent of consumers often throw away ingredients because they only need a small part of the product. So it's high time for some inspiration to cook with leftovers. You don't have to go out for the groceries either:score! HelloFresh has listed three surprising 'leftover recipes' that are extra tasty during the cold winter weather.

Vegan chocolate mousse with chickpea juice 🍫

You need this:
125 ml chickpea juice
150 g dark chocolate (vegan)
1 tsp vanilla sugar
60 g sugar
Pinch of salt

This is how you make it:
Using a hand mixer, mix the chickpea juice in a bowl until foaming
Add the sugar
Melt the chocolate and let it cool to room temperature (about 18°C). Can be used au bain-marie or in the microwave
With the chocolate and the whipped chickpea juice. Make sure that the chocolate does not sink to the bottom.
Add the vanilla sugar and a pinch of salt
Divide the mousse among several ramekins and let it set for at least 4 hours.

French toast from stale bread 🍞

You need this:
25 ml milk
½ tsp cinnamon
75 g brown sugar
3 eggs
slices of stale bread
Butter

This is how you make it:
Beat the eggs, milk, sugar and cinnamon in a bowl.
Soak the bread in the mixture
Fry the French toast in a pan with butter until brown
Extra tasty:top your French toast with banana, chocolate or powdered sugar (or all three!)

Peel homemade tempura from zucchini 🥒

You need this:
Peel of 1 kg courgette
1 egg yolk
130 g flour
15 cl ice-cold water
Sunflower oil

This is how you make it:
Sprinkle some flour over the courgettes
Mix the flour, egg yolk and ice-cold water together in a bowl
Heat the oil in a pan to 180°C
Dip the zucchini in the tempura dough and fry for 2 minutes in the pan with oil
