During the winter, there's nothing like a good little velouté, quick to prepare , to warm up while watching the latest Netflix releases. We stop you immediately, there is no question – except in exceptional circumstances – of starting your Liebig stock. What's better than doing things for yourself huh? No need to be a cordon bleu, all you need is the right vegetables, a blender, a little elbow grease and it's done in a few minutes.
To have a velouté full of flavors, bet above all on seasonal vegetables or yesterday . Then, the little secret is to brown them in a pan with a drizzle of olive oil, just before cooking them in water.
Also, don't forget the condiments such as spices, onion, garlic or aromatic plants. They are essential to season your soup and spice it all up. A little extra, you can add certain dishes, just before serving, to have a very tasty velouté :a quenelle of cheese (goat cheese, fresh cheese) and a few seeds for the crunch.
