What are the ingredients for 4 people?
– 1 small round pumpkin
– 1 small butternut squash (or 1 large round pumpkin if there is no butternut squash)
– 2 onions
– garlic
– 200 ml coconut milk
– ginger
How are you doing?
Cut the pumpkin into large pieces (peeling is not necessary) and shred the onions. Cut a piece of ginger into small pieces. Place it in a large saucepan just submerged in water. Press a clove of garlic through the whole and bring to the boil. Let everything boil gently. Now remove the pan from the heat and drain the liquid into a second pan or large bowl. Now let both the vegetables and the liquid cool down for a while. Once cooled, you can put it in the blender and blend until creamy. Add some of the liquid and keep adding (depending on the desired thickness). Put everything back in the pan, add the coconut milk and possibly some garlic and pepper for taste. Then the soup is ready to serve!
Hint: add a few carrots for variety and extra vitamins.
