In autumn and winter, the king of vegetables is the pumpkin.
As it's soup season, why not prepare a good pumpkin soup?
It is a delicious dish, economical...
... and which warms winter evenings.
Here is the recipe.
- 250 g of pumpkin
- 2 onions
- 2 potatoes
- a little fresh cream
- 25 cl of milk
- salt, pepper
- optional:nutmeg and parsley
1. Peel your pumpkin, remove its seeds
2. To make it cook faster, cut it into very small dice
3. Peel your onions, cut them
4. Peel your potatoes, dice them
5. Put everything in a large saucepan, cover with water
6. When the vegetables are tender, they are cooked through, remove the pan from the heat
7. Mash your vegetables with a fork or a food processor
8. Add milk
9. Season with salt and pepper, add a little nutmeg and parsley if you wish
10. Heat again for a few minutes in the pan
11. At the end of cooking, add 1 to 3 tbsp of fresh cream
If you like a soup that keeps chunky, crush or grind your soup very little. If you prefer cream, use a mixer and mix a lot, adding water if necessary.
At a party or special meal, you can try gutting the pumpkin without peeling it and serving your soup in the gutted pumpkin. It looks great on your table -;)
