Above all, read the few tips and secrets for a successful paella !
Start by properly greasing a frying pan, then place it on the fire, adding a few spoons of olive oil.
Finely chop the onions, then sauté them over low heat. Meanwhile, cut the peppers into strips, add them to the mixture after a quarter of an hour, and cook for another 5 minutes.
In a separate dish, sear the chicken for about twenty minutes. After a quarter of an hour, you can add the chorizo cut into thin slices.
Prawns should be cooked briefly and briskly. Once oiled, place them over high heat for about 3 minutes on each side. Keep them aside.
In the same dish as for the prawns, cook the squid breasts over a lower heat for about 10 minutes.
In the paella dish, add olive oil and pour all the rice. If the rice is well coated in fat, it should become translucent. If not, continue blending, and add more oil as needed.
Add the onions and peppers to the rice, along with the roughly chopped tomatoes (you can peel and seed if you prefer), peas and finely chopped garlic.
Then add a good pinch of saffron which will give the rice an aroma and a colorful dress. Pour a glass of water, salt and pepper. Mix thoroughly for 5 minutes.
Then pour 1 liter of water, and cook for about thirty minutes while stirring regularly.
When the grains of rice are very tender, you can stop the cooking and place the chorizo, the meat, the squid whites, the mussels and the prawns on top of the rice. Put the lid on the dish, and leave it like this until the mussels slowly start to open.
