250 grams farfalle (the butterfly paste)
50 grams of lettuce, of your choice
230 grams of cherry tomatoes
220 grams of chorizo
300 grams of manchego
2 pointed peppers
1 red onion
a handful of olives
for the dressing:
3 tablespoons olive oil
half a red pepper
1 tablespoon oregano
and salt and pepper
Bring a large amount of water to the boil in a pan. Cook the pasta, following the directions on the package. Place the pasta in a colander, pour cold water over it and let the pasta cool. A little bit of olive oil through it prevents the butterflies from sticking together. Take a dry frying pan and fry the chorizo – cut into strips – until crisp. After baking, place on a sheet of kitchen paper to drain. Cut the cherry tomatoes in half. And cut the pointed pepper, the onion and the manchego into small pieces. The dressing is very simple:finely chop half the red pepper, mix with the olive oil and oregano. And add some salt and pepper to taste. Now you can place the pasta on the plates, with all the toppings mixed in. Don't forget to add a handful of lettuce per person. Add dressing to personal taste. A few olives on top to crown your work.
