Preparing a fruit salad is child's play but for it to be successful it still has to be tasteful. For chef Cyril Lignac one element is important:juice . It flavors and seasons the dessert in the blink of an eye. Depending on the ingredients used, it brings a tangy, sweet or full-bodied note. In his recipe Cyril Lignac presses a small Corsican grapefruit to which he adds aromatic herbs mortared (mint leaves, verbena and lemon balm that tastes like orange) and a passion fruit. The final touch:fresh almonds to give a little crunch to the fruit salad.
