Wash and slice the leek whites, cook them in boiling salted water, drain and squeeze very hard. Book.
Peel the garlic and crush it, put it in an oven dish with the butter, sweat over low heat without letting it brown.
Spread the leeks in the dish.
In a bowl, break the egg, add the fresh cream, salt and pepper, nutmeg.
Mix the cream and egg well, spread this mixture over the leek.
Sprinkle with grated cheese.
Cook on medium heat until the gratin is golden brown.
