Cut the peeled potatoes into large orange wedges, wash, drain and spin dry on a clean cloth.
Heat the fat and add the garlic clove and the potato wedges; lower the heat and let brown gently on all sides, turning them from time to time with a wooden spatula, cover and cook for 15 minutes. (you can also cook them in oil).
Drain the french fries, put back in a saucepan and drizzle with clarified butter, salt with coarse salt and sprinkle with chopped parsley.
Note:these fries can be prepared in advance, to keep them crisp, beat 2 egg yolks with a fork, spread them over the fries while continuing to whisk and quickly stir all the fries by hand, then the season with salt and parsley, remove to an oven-safe dish and keep warm in a preheated low oven (180°C) until ready to use.
