Cook the beef in a broth with the bouquet garni, Leave to cool and cut the boiled beef into slices. Book.
Cook the potatoes in salted water or steam them with their skins on, then peel them and cut them into thin slices.
Peel and chop the shallots. Add them to the potatoes, cover with the mustard vinaigrette and leave to marinate for a few moments.
Cut the tomatoes into rings, thinly slice the red onions into rings.
Arrange the warm potatoes in a dome. Add the beef and the red onion rings and finally the tomato rings. Drizzle with mustard vinaigrette.
Note:You can peel the tomatoes and seed them before slicing them.
