Salmon steaks with olive puree and fondant onions


Ingredients:4 people
  • Fresh salmon fillets with their skin peeled
    4 x 125 g
  • plain black olive purée (Isnardi, Ardoino, Cipriani)
    2 tablespoons
  • spring onions
    2
  • flower of thyme
    2 pinches
  • olive oil
    1 tablespoon
  • coarse sea salt
    2 tablespoons

Rinse the salmon steaks, pat them dry and sprinkle them with coarse salt on both sides. Let them macerate for 20 minutes then rinse and pat them dry. Brush them with olive oil.

Peel the onions, rinse them and pat them dry. Grate them on a chip grater, add salt and the rest of the olive oil.

Heat a 26 cm diameter cast iron casserole over high heat and place the salmon steaks in it. Garnish them with olive puree and surround them with onions. Sprinkle with thyme flower. Leave to cook for 4 minutes then remove the salmon fillets and place them on 4 hot plates. Surround them with onions and serve immediately.
