"Mara des bois" strawberry salad with kumkats, verbena infusion, a few pink berries

- Cross or brown sugar

- 4 hours of refrigeration

- Cooking time:25 minutes
- Wash the kumquats, cut them in half lengthwise, put them in a saucepan with 1/2 l of water and the brown sugar, cook them over low heat for about 25 minutes.
- Add the verbena leaves off the heat and leave to infuse until cool.
- Clean and cut the strawberries in half, put them in a bowl, add the kumquats and their cooking juices with the verbena leaves.
- Let macerate for at least 4 hours.
- Crush the pink peppercorns.
- Dress the fruits and their maceration juice in ice cream cups, sprinkle with pink peppercorns.
