"Mara des bois" strawberry salad with kumkats, verbena infusion, a few pink berries


Ingredients:For 6 cups
  • kumkat
    300 g
  • Strawberries
    500 g
  • Cross or brown sugar
    120 g
  • Fresh verbena
    1 small bunch
  • Freeze-dried pink berries
    20 g


Preparation:
  • 4 hours of refrigeration
  • Preparation time:15 minutes
  • Cooking time:25 minutes


  • Wash the kumquats, cut them in half lengthwise, put them in a saucepan with 1/2 l of water and the brown sugar, cook them over low heat for about 25 minutes.
  • Add the verbena leaves off the heat and leave to infuse until cool.
  • Clean and cut the strawberries in half, put them in a bowl, add the kumquats and their cooking juices with the verbena leaves.
  • Let macerate for at least 4 hours.
  • Crush the pink peppercorns.
  • Dress the fruits and their maceration juice in ice cream cups, sprinkle with pink peppercorns.
