Prepare a shortcrust pastry:coarsely mix the butter cut into small pieces in the flour. Add salt and water. Form a soft but not sticky dough. Leave to rest for 1/2 hour then roll out and line a fairly high-sided pie pan. Prick the bottom with a fork. Bake for 20 minutes in a fairly hot oven. 7 – (240°C).
Wash, stem and pit the cherries. Melt the butter in a sauté pan. Add the cherries, sprinkle with sugar (more or less depending on the acidity of the fruit) and cook this compote, letting it caramelize slightly. Leave to cool.
Finally, beat the fromage blanc and the sugar to make it very creamy. Separately, whip the whipped cream and gently fold it into the cottage cheese.
Top the baked and cooled pie crust with cottage cheese.
Arrange the cherries on the cottage cheese and serve immediately.
