Ingredients for four people: 250 g of chocolate + 2 tablespoons of water, 20 g of softened butter, 20 cl of cream, 20 g of icing sugar, 20 g of peanut butter, 50 g of cocoa powder.
In a bain-marie, melt the chocolate, broken into pieces, with water until smooth. Add the softened butter, then the peanut butter; continue with cream and icing sugar. Firm up in the fridge.
Put the cocoa powder in a dish. Take the truffle dough out and shape it into small balls. Roll them as you go in the cocoa. Chill before serving.
Jayne's tip:Don't forget to melt the chocolate over low heat, to prevent it from forming lumps. Add a spoonful or two of whiskey or any other flavoring to your liking. Truffles are best if eaten the same day. If it's not too hot, serve them at room temperature.
Peanut Lemon Tiles:
Ingredients for 4 people: Peanuts 100 g, flour 75 g, caster sugar 190 g, melted butter 170 g, egg whites 5, 1 teaspoon of lemon brunoise, 1 lemon.
Mix the flour and sugar, then add the whites gradually. Stir everything well, then add the melted butter, the zest of the lemon cut into a brunoise and its juice, plus the roasted and crushed peanuts.
Grease a baking sheet and form small round heaps with a spoon. cook in the oven (th.6/7 180°C). Rise as soon as cooked using a triangle and place on a tile tray.
