Wash and pit the apricots.
Macerate them with half the sugar for one hour.
Make a pie dough by quickly mixing the flour, the butter in pieces, the whole egg, the salt and very little water.
Shape into a ball and let stand for at least 1/4 hour.
Butter a movable-bottomed mold with fairly high edges. Garnish it with 2/3 of the dough spread over a good 1/2 cm.
Fill with the apricots (do not add juice if any has formed) sprinkle with the remaining sugar.
Cover with dough and seal the edges with a little water.
Preheat the oven to. 7 – 240°C.
Brown the surface with a spoonful of sweetened milk and put in a hot oven for about 45 minutes.
Unmold right out of the oven.
