I got these tips from a saleswoman at Gérard Mulot called Florence. She has been working there for more than 8 years so she knows how to do it.
As for Gérard Mulot, he's a pastry chef who makes very good homemade macaroons (OK, it's not cheap, but it's delicious and not industrial like at Ladurée).
Here are now the 2 tips that Florence gave me to better preserve them without them softening:
The best way to keep your macaroons as long as possible in good conditions is to put them in the fridge, according to Florence. Yes, macaroons should not be left at room temperature.
In the fridge, place the macaroons in the central part . That is, on the middle shelves.
This cool zone corresponds to a perfect temperature for macaroons between 4 and 6°C.
Now that you know where to put them in the fridge, you have to choose an appropriate container.
She advised me to put them in an airtight box, Tupperware type. Why ? So that all the flavors remain intact.
And also so that fridge smells don't spoil the good taste of the macaroons.
Of course, nothing prevents you from keeping the original box of macaroons. That way you can always serve them on the table in a nice presentation box when you want.
But by the way, when do you have to take them out of the fridge? Good question.
If you want your macaroons to be just as tasty during tasting, it is important to take them out 1 hour before.
You can believe me, it was Florence who told me.
By taking them out at the right time, the macaroons have time to take on their colors and release all their aromas:chocolate, pistachio, raspberry, lemon, almond, coffee, caramel (the ones I prefer)...
Wondering what is the shelf life of macaroons?
By keeping your macaroons in the fridge in an airtight box, know that it is quite possible to keep them for 1 week without altering the taste or consistency.
I tested these 3 tricks from Florence and I can tell you that it works very well. Even after 1 week, I continued to enjoy!
