- 50 g wild garlic leaves .
- 300 g of potatoes.
- 1 onion.
- 1 vegetable stock cube.
- 1 tablespoon of olive oil.
- 50 ml fresh cream.
- salt, pepper.
1. Peel the onion.
2. Chop it finely.
3. Peel the potatoes and wash them.
4. Cut them into small cubes.
5. Heat the oil over low heat in a saucepan.
6. Sauté the onion for a few minutes until translucent.
7. Add the potatoes.
8. Pour 1 liter of water.
9. Add the vegetable stock cube.
10. Boil.
11. Lower the heat:you should get small bubbles.
12. Cook for 20 min.
13. Wash the wild garlic and finely chop.
14. Five minutes before the end of cooking potatoes and onion, add wild garlic.
15. Leave to cook for another 5 minutes.
16. Mix with an immersion blender.
17. Add cream, salt and pepper
18. Reheat over low heat, without boiling. Serve hot.
There you go, your wild garlic soup is ready :-)
