2. Cut the watermelon in half, lengthwise .
3. Cut each half in 2, so as to obtain 4 districts of watermelon, as in the photo above.
4. Place one of the wedges on a rimmed baking sheet and take a long, sharp knife.
5. Start cutting vertical slices 3 cm thick , without completely pushing the blade into the skin of the watermelon.
6. Continue to cut vertical slices down the length of the quarter, at regular intervals .
7. Your vertically sliced watermelon should look like the one in the photo above .
8. At this point, I like to put the watermelon in front of me and rotate it 90º . It's not mandatory, but that way it's even easier to cut.
9. Now start cutting the watermelon into horizontal slices , and always 3 cm thick .
10. Did you get the trick? Keep cutting layers of horizontal slices, so as to obtain a "grid" of small squares.
11. When cut into horizontal slices, the first side of the watermelon should look like the one in the photo above .
12. Now rotate the watermelon wedge and start to cut the opposite side in horizontal slices 3 cm thick.
13. Continue to cut horizontal slices in the watermelon, from top to bottom.
14. Now your watermelon has the same pattern on both sides:a grid of small squares .
15. Once you have cut all the small squares, pass the blade of the knife between the skin and the flesh .
16. Continue to pass the blade of the knife over the white part of the flesh, so as to obtain a maximum of cubes .
17. We're almost there!
18. And that's it, it's over! The watermelon cubes come off on their own. Fastoche! Repeat the above steps to cut out the other quarters of your watermelon.
