Tony's Chocolonely has recently succeeded in making the cocoa butter from traceable cocoa beans, which was not possible before. To celebrate this, white chocolate bars are now being added to the range. One of the two bars is a limited edition from 2012:welcome back , White Raspberry Crackling Sugar.
What is traceable cocoa butter?
The main ingredients for chocolate are cocoa butter and cocoa mass. White chocolate is made with cocoa butter, for milk and dark chocolate you also need cocoa mass. The cocoa mass for Tony's chocolate was already traceable with cocoa beans purchased directly from their partner cooperatives in Ghana and Ivory Coast. Only the cocoa butter, that was still difficult. But . Last summer Tony's Chocolonely and the largest chocolate maker in the world - Barry Callebaut - signed a partnership agreement. Barry Callebaut has made major adjustments in the chocolate factory to process Tony's cocoa butter in a traceable way. A cocoa butter tank has been installed especially for Tony's own cocoa butter and new pipes have been laid to add this cocoa butter when making the chocolate. So now the road is finally clear for white chocolate.
