Freekeh is a cereal from the Middle East. It's wheat, processed in a different way. Freekeh is durum wheat that is harvested unripe and then dried in the sun. Then the grain is roasted and rubbed together. Finally, it is broken into pieces. Roasting creates a nutty flavor. Because Freekeh is harvested when it is still unripe, the grain has a high nutritional value.
