When you think of sugar-free, it really doesn't mean you have to say goodbye to sweet. The cookbook 'Happy sugar-free sweet!' by Saskia Koopman proves this. Santé can share a recipe:orange and chocolate coconut macaroons.

Preheat the oven to 175 degrees. Combine grated coconut, coconut flour and a pinch of salt in a food processor. Mash the banana and add it to the food processor along with the coconut oil, vanilla and the zest of half an orange. Mix until well blended, but not for too long. Line a grid with baking paper and scoop balls of the batter onto the grid with an ice cream scoop. Press the balls well, otherwise the coconut macaroons will fall apart quickly. Bake the coconut macaroons for 15 minutes. Then melt the chocolate in a bain-marie and sprinkle it over it. Grate some more orange zest over the macaroons and then let them cool well on the grid. These coconut macaroons are tasty and quick to make. The addition of the chocolate is optional, but extra festive. I used the homemade chocolate sweetened with maple syrup (page 89), but you can also just buy a whole chocolate bar at the health food store. (vegan, lactose-free)
