What makes this dessert special is the fresh taste of the mousse with the crunchy bite of the crumble. The mousse has a nice creamy structure due to the avocado and coconut oil. The lime and maple syrup in this recipe from the book The blender book provide a nice sweet-sour taste balance.
For 6 glasses
Cut the avocado into pieces. Place the avocado, lime juice and zest, coconut oil and maple syrup in the blender and blend on medium-high for 1 minute until you have a smooth mousse. Taste to see if you find the mousse sweet and sour enough, add extra maple syrup or lime zest if necessary. Spoon the mousse into the glasses and put in the fridge for at least 4 hours.
Preheat the oven to 160 degrees and line a baking tray with baking paper. Roughly chop the pecans, mix in a bowl with the grated coconut and honey. Spread on the baking tray and roast in the oven for 10 minutes. Let cool and break into pieces. Garnish the mousse with the crunchy pecan nuts and raspberries.
