She was once an HR manager. Now Kim Sue Palm from Rotterdam sells homemade sweets that are gluten-free, vegan and free of refined sugars with her own company SUE. We asked what her food diary looks like.
“I was always interested in healthy eating – I eat fries sometimes, but I just prefer salad and soup – and had a blog where I shared healthy recipes. Since I couldn't find any healthier alternatives to sweets, I decided to experiment myself. That's how I started making the bites that we still sell:square pastries in all kinds of flavors. I made them for myself and for friends and sometimes stood at a market with them, but I had no bigger plans with it. It was something I did for relaxation next to my work as an HR manager.
I like to think about how I can bake something that is even tastier than the normal version, which is often full of sugar, milk powder and other unhealthy junk. If it also looks beautiful, then I can be very happy. The ball started rolling when I took my bites to a friend's housewarming. The owners of a Rotterdam coffee shop were also there. They liked my bites and wanted to sell them in their business. So I suddenly had a point of sale from scratch.”
Besides tasting her SUE bites, we're curious what Sue eats for the rest of the day. This is her food diary:
“I start the day with a large glass of water and tea and sourdough bread with avocado. Or, when I'm at the bakery, coconut chia pudding.”
“Sometimes I have lunch at the office, then again in our catering business or bakery. Depending on where I am, I have salad, soup or bread with hummus and cucumber.”
“I have to take the children into account a bit:one likes rice more, the other likes pasta. I like to make chili sin carne, and pasta with vegetables and pesto. Or a tasty saoto soup. Everything without meat.”
“In a day I drink about three or four cappuccinos with oat milk and a lot of ginger tea. I don't snack much. I like to eat fruit and our own products in between. From our 'tiramisue' I get
not enough.”
