Garvey Food Court in Chicago is typically American:many unhealthy eateries where mainly fast food is on the menu. Entrepreneur Luke Saunders saw an opportunity there.
Fresh, organic and recyclable
Among all the unhealthy restaurants he placed the Farmer's Fridge. No XXL burgers, but fresh salads with, for example, kale, strawberries or quinoa. The ingredients are organic and as much as possible from local farmers. The machine itself is also 80 percent recyclable.
The rise of healthy vending machines
The idea came mainly from Luke's own frustration. He traveled a lot for work and was amazed at how difficult it was to buy healthy food on the go. At the moment the machines are a pilot and it is taking off well. More vending machines are planned for 2014.
