Marijke Berkenpas, food scientist, dietician and known for I'm A Foodie, prefers not to be in the spotlight. But when it comes to healthy food, it is! We are curious what her food diary looks like.
“I eat intuitively. I feel good signals of hunger and satiety in my body. I have a healthy diet, but I do not impose eating rules and restrictions on myself. I genuinely enjoy a piece of chocolate without feeling guilty. I think it is especially important to take good care of my body.”

“We eat vegetarian. My day starts with a fairly extensive breakfast with my children. For example with oatmeal from the oven or pancakes. I sometimes eat fruit in the morning. Lunch is sometimes whole wheat bread and other times a salad. I eat a lot of vegetables and also try to snack on carrots, peppers and tomatoes. Healthy eating is a matter of awareness. When I had just graduated, I still used packets and sachets for cooking. It's never too late to make the switch. I now automatically make healthy choices in the store. I always have products such as oats, wholemeal flour, frozen vegetables and nuts from the market at home.”
“I have a number of regular breakfasts in my repertoire that I alternate:mug cake with oatmeal, banana muffins with whole wheat flour, pancakes, yogurt with fruit and granola and an apple pie oatmeal from the oven.”
“When I eat bread or crackers, I make sure it's whole grain. I combine them with vegetable spreads, such as hummus, peanut butter and nut butters. Or I eat an egg with avocado. I also like to eat a salad for lunch.”
“Always vegetarian. My kids are not such adventurous eaters. Vegetable lasagna or spaghetti make them very happy. That is certainly on the menu every week. I also like to make gadogado, savory pies and oven dishes. Always the healthier version with whole grain products and lots of vegetables.”
“I am a coffee lover and drink two to three cappuccinos a day. I also drink water. Favorite snacks:homemade banana bread and the occasional chocolate and cheese.”
