Margriets Spijksma, personal soul trainer, speaker and author, talks extensively about her lifestyle in the March issue of Santé. But what about her diet? We take a look at her food diary.

“Cooking is not a big thing , it's not passion. My luck is that my mother-in-law often comes to bring food. I don't pay much attention to my diet, but rarely sweets. I almost never eat chips and toast. I usually can't eat a whole piece of cake. Fifteen, twenty years ago I was just insatiable. I had a real sweet tooth and knew no boundaries. The extra kilos felt emotionally like a protective 'coat', I no longer need that."

Food diary

Breakfast

“I start the day with water and vitamin tablets. Then I drink tea and eat a bowl of Greek yogurt with muesli, raspberries, blueberries, two kiwis – so I never have inflamed gums again – and a banana.”

Lunch

“I eat three or four sandwiches. Almost always with peanut butter. Sometimes with honey on top, it doesn't get any better than that. For a change I sometimes take chicken breast or cheese. When I have lunch with a friend, I usually have a goat cheese salad. I love that.”

Dinner

“I have the luxury of hardly ever having to cook. My sweet mother-in-law loves to cook and often brings food. Nasi, Dutch pot or baked potatoes with meat and vegetables. We often get food on weekends. Thai curry, pizza or tapas. At the weekend I drink a glass of wine. I almost never eat desserts and ice cream.”

In between

“I work until four o'clock every day and then come home hungry. Then I'll have some cashews or walnuts or a rice cake with something on it. Sometimes a candy. I drink coffee in the morning and in the evening after dinner. I also drink a lot of water. Sometimes tea or Optimel.”
