Cake for breakfast? It's possible! This delicious kiwi breakfast is also very good for your mood. Because did you know that 8 out of 10 Dutch people indicate that they have a better mood after a good breakfast? A festive breakfast like this kiwi breakfast cake is of course extremely suitable for that!
Ingredients
- 3 Zespri kiwifruit
- 2 ripe bananas
- 150 gr oatmeal
- 100 gr flour
- 2 tablespoons grated coconut (+ some extra to decorate)
- 4 medjool dates
- 50 gr chopped walnuts
- 3 eggs
- 1.5 tsp baking powder
- 1 tsp cinnamon
- pinch of salt

Preparation method
- First heat the oven to 180 degrees.
- Put the bananas with the dates (without pits) in the blender.
- Mix in the oats, flour, walnuts, eggs, coconut, baking powder, cinnamon and salt with a spatula and make a 'sticky' mixture.
- Cut one and a half kiwis into small cubes and mix them with the dough.
- Cut nice, thin slices from the remaining kiwis.
- Place a baking paper on the bottom of a rectangular baking pan and lightly grease the edges with some grease.
- Put the kiwi slices on the baking paper on the bottom and tip the dough over them.
- Bake the cake for about 40 minutes.
- Let it cool down for a while and then:carefully tip it over! The kiwis are now nicely on the top of your cake. Sprinkle a little coconut grater on top as decoration and you're done!
