Start the day with this healthy breakfast

Whole-wheat muffins with oats, cream cheese and kiwi:a tasty and healthy breakfast or a responsible snack, perfect for boosting your immune system.

Ingredients

For the muffins

  • 180 g wholemeal wheat flour
  • 80 g oat flakes
  • ½ bag of yeast
  • 2 eggs
  • 4 tbsp honey
  • 200 g light cheese spread
  • 4 tsp soy or oat milk
  • 1 Zespri Green kiwi or Zespri SunGold kiwi

For the topping

  • 200 g light cheese spread, natural
  • 35 g agave syrup
  • 2 Zespri Green kiwis or Zespri SunGold kiwis

Preparation method

  1. Heat the oven to 200 °C.
  2. Mix the eggs with the light cheese spread, the soy or oat milk and the honey. Add the mixed Zespri kiwifruit and mix. Add the oats, sifted flour and yeast. Let the mixture rest in the fridge for 30 minutes to allow the oats to hydrate.
  3. Spread this mixture over the paper or silicone muffin tins and bake for 30 minutes. Let cool on a wire rack.
  4. For the topping:mix the light cheese spread with the agave syrup and a mixed kiwi. Place the mixture in the refrigerator for at least 1 hour. Use a spatula to spread the topping over the muffins.
  5. Decorate the muffins with the remaining kiwi slices and serve immediately.
